Also known as Porridge and Jam Buns
This is a recipe for a delicious and easy-to-make family treat. The buns are made with shortcut pastry (which you can buy or make yourself), oatmeal, butter, caster sugar, vanilla essence, eggs, and ground almonds. They are topped with jam and baked until golden brown.
Ingredients:
- Shortcut pastry (buy or make – recipe below)
- 6oz of oatmeal
- 2oz of butter, melted
- 4oz of caster sugar
- 2 teaspoons of vanilla essence
- 2 eggs, beaten
- 4oz of ground almonds
- Jam of your choice
Instructions:
- Preheat the oven to 180 degrees Celsius.
- Mix together the oatmeal, butter, caster sugar, vanilla essence, eggs, and ground almonds in a bowl.
- Cut the shortcut pastry into small circles.
- Place a generous teaspoon of jam in the center of each pastry circle.
- Cover the jam with the oatmeal mixture.
- Place the buns on a baking tray and bake for 25 minutes, or until golden brown.
- Serve warm or cold.

This is a sweet treat that’s not too unhealthy and uses all-natural ingredients. It’s delicious with a tea or coffee and quick to make with the kids. Enjoyed by adults and kids alike!
Recipe for shortcut pastry:
- 225g of plain flour
- 112g of butter, chilled and diced
- 2-3 tablespoons of cold water
Instructions:
- Put the flour and butter into a food processor and blitz until the mixture resembles breadcrumbs.
- Add the water and blitz again until the dough just comes together.
- Wrap the dough in cling film and chill for at least 30 minutes before using.
To make the oatmeal and jam buns, simply roll out the shortcut pastry and cut into small circles. Place a generous teaspoon of jam in the center of each pastry circle and cover with the oatmeal mixture. Place the buns on a baking tray and bake for 25 minutes, or until golden brown. Serve warm or cold.
